{Valentine's Day} Fish School, Heart Pizzas & Cupcakes

Feeling like Super Mom...cupcakes and Valentine's finished for my son's daycare party. However the heart pizzas were a bust for my son I still think they tasted pretty good. Valentine's Day 2013 is almost in the bag! ha ha bag...get it? ;)

Filled the ziplocs with Gold Fish Crackers....much healthier than candy. The cupcakes are enough.

 My attempt at "Heart" pizzas. Gluten Free Chebe Pizza Crust, I thought they were tasty.


& then the cupcakes! Super cute toppers I found on Amazon and the tray is a Pampered Chef Cool & Serve with the inserts taken out, works perfect!

{Gluten Free} Big Choco Chip Cookie

Birthday celebrations, Valentine's Day or walking around the mall there are times when that tempting "LARGE PLATE SIZED COOKIE" comes across your path and if you are like me, Gluten Free, you just *sigh* and pass on by...NO MORE! {LOL}

I wouldn't attempt this with just any pan but with my White Ceramic 8" Saute Pan from Pampered Chef it came out perfect! So here's how it went down...

{Preheat the oven for 350 degrees....Collect ingredients. I used the Betty Crocker Gluten Free Cookie Mix from Publix. Straight from the box you need one stick of soften butter, 1 ts Vanilla, 1 egg mixed together, then add the powder mix.}


{The mix will be stiff like a regular cookie dough...pat it down into the pan pretty firmly. DO NOT add anything to the pan, DO NOT spray it with anything and DO NOT grease it...trust me
Bake at 350 degrees for at least 25 minutes and check to see if it's browning on top, at 25 minutes I put it in for another 10 minutes and was happy with the browning}

{When you remove the pan let it stand and cool completely! THIS IS THE HARD PART! I couldn't stand looking at this big giant yummy gooey cookie for long, I don't eat sweets like this very often so this was tempting.}

{TADA! See what I mean by letting it cool completely...mine cracked a bit on the side but when completely cooled this puppy would have been perfect! It didn't stick at all to the pan and slide out quite easily. Could be decorated with a cool whip, cream cheese mixture (cup of each) and using the Easy Accent Decorator for the application I was just too anxious to eat it! Next time I'll have a decorated piece to show}

{Crafty} Crib Springs and Washi Tape

If this is what I could do craft wise on a sick day then I wish I could get to do crafting on a day where I feel alot better.

Took my son's old spring from his crib and hung it up on the wall behind the couch in the livingroom and am attaching his baby photos chronologically using Washi taped clothes pins. Simple Simple ;)

{Family} Happy Birthday to the love of my Life! He's 3 today!

My little boy is THREE today! So much has happened over the last three years and I'm the kind of Momma that likes to make a BIG stink about birthdays. We're doing a Go Diego Go themed birthday party over the weekend and a little daycare cupcake day today.

Saw this idea on Pinterest, no doubt, and was so excited to try it out! However I have a twist with the cupcakes...there are m&m's inside! Quick and easy...baked up boxed chocolate cake mix (I love love love my Cupcake Stone), let them cool, cut out the centers added m&m's and iced them! I tinted the icing as green as I could...something for me to master later on, but for now I imagine these will be gobbled up by all the little kids at daycare today.

The tray I ALWAYS use for transporting cupcakes is my Cool and Serve Tray. It comes with cooling inserts for Deviled Eggs or as a flat surface to use with the Clear Veggie Trays which are all removable and then there's lots of space for transporting cupcakes

{Gluten Free} Easy Cheesy Bread

Let me just say that Gluten Free Bisquick is my #1 love, just using the pizza dough recipe on the side of the box, the seasoning I use is the Garlic Parmesan Dipping Seasoning and adding a 1/2 cup of sour cream to the mix makes a pretty great pizza base. This time all I added was a thinly sliced tomato (had one in the fridge but it's not required), a block of Mozzarella cheese (the soft kind that is shrink wrapped), and more Garlic Parmesan Dipping Seasoning on top.

Baked at 425 degrees on a Metal Baking Sheet for approx 17 minutes....set it for 10 minutes and check then I baked it for another 7 minutes and it was perfect!

{Scrapbook} Scrap on a Dime Baby Shower Album (Keller's Creations)

At the CKC in Jacksonville I took the Scrap on a Dime class by Keller's Creations for the first time. We did a full 12 page album in an hour. Yes completed in the hour! Of course you could have embellished the heck out of it and that's just what I did when I got home and decided to do an album for a friends' baby shower gift. I took the same size papers cut out of only 4 pieces of scrapbook paper to make the entire 12x12 (12) page album! I embellished with some pink ribbon, pink flowers, stickles, buttons and alpha stickers. On the front of the album I used chipboard alpha letters and tied some ribbon on the spine.

It was so much fun making something girly since I'm usually into Toddler Boy mode. and Only took me about a total hour and a half between nap times and bedtime for the toddler. {Gluten Free} Banana Bread Homemade

Being gluten free hasn't been nearly as hard as one would think. Especially when I just think about my eating habits to be meat, dairy, vegetables and fruit. The craving for breads went away about 3 months in and I've tried some of the mass produced Gluten Free breads and just haven't found anything worth eating on a daily basis. 

SO I was cleaning up and realized I had 4 bananas about to go passed the Toddler edible stage so I hunted for Banana Bread or Muffin ideas and I ended up with my Uncles recipe which I was going to attempt using my Gluten Free Pantry All Purpose Flour. AH! Haven't made homemade bread of any kind in ages it feels like. It's been over a year since I gave up gluten all together.

Used my Stoneware which browned this baby perfectly!

Here we go! I did add a bit more to the recipe than my Uncles but that's just how I roll.

{Gluten Free} Dinner time! Turkey Fajita Lettuce Wrap

I cook like I live...off the cuff. But I did use the Pampered Chef Chicken Fajita Bites (recipe available in the Fall 2012 Season's Best Cookbook).



So I used 4 turkey fingers, cooked them up in the 10" Executive Skillet, Garlic Infused Oil, Chili Lime Rub and Salt and Pepper. They browned awesome!



Took the turkey out, chopped it up, drained the oil, put the turkey back in the skillet, added a scoop of sour cream, half an avocado, most of a tomato (left some for the topping) and a handful of cheese. Hey my Mom Mom measured like this and it still works today :)

Let it simmer up a bit and then added it to some lettuce leaves, with a little more cheese, some tomatoes and a bit more sour cream on top. I have to say this was pretty great to eat :) & had leftovers for two more meals.

{Charity} Tim Tebow Foundation W15H

Another charity which I gave supported this week is the W15H thru the Tim Tebow Foundation. I am truly enamored with Mr. Tebow and the good that he's doing with his life thru Christ. I may not be famous or even known but I do what I can with what God has given me. This is such a great cause please donate today no matter how much you give no one EVER went poor by giving.

{Charity} Super Nets

I wanted to begin sharing some of the charities and organizations that I give to whenever I have a spare $5, $10 or more in my bank account. I always remind myself that no one EVER went poor by giving. Our Pastor shared this organization with us at church this past Sunday and the thought of losing my son to something so easily preventable hurts my heart. Give what you can and give often!

Taste Test Tuesday

Another week another Taste Test Tuesday...I could do this every week! Had some good friends over to give me a little feedback on a new recipe. This week I made the Tapenade Turkey Meatballs using the Artichoke Tapenade recipe from the new to be released Season's Best Cookbook from Pampered Chef. I just need to start making some of these new recipes so that I'm prepared for when someone requests it for a cooking show.

Everyone seemed to LOVE them and even had seconds. Only downside to the process of cooking them in the Small Ridged Baker in the microwave as the recipe calls for is that they lacked color. They were finished and fully cooked in only 8 minutes which is GREAT for families that are short on time to get dinner on the table. I may try this again and bake them in the oven which will take longer but I want to see how they would look.

So I pulled out all the Pampered Chef savory sauces that I own which is just about all of them and everyone got to pick one out for themselves. Mine just happened to be the Raspberry Habanero but I also have the Ginger-Wasabi, Spicy Pineapple-Rum, Maple Honey Mustard and Teriyaki Sauce with Honey. They are so great with just about any meats and fish or even to use as a dressing on salad or a coating on pasta. 


I just love cooking for people and learning to techniques and flavors. So glad everyone loved them!

Gluten Free Friday Night

Thanks to Hugs & Cookies for giving me motivation to bake on this humid and bug ridden Friday night. The challenge is a GLUTEN FREE BUCKLE YOUR SEAT BELT BARS recipe. & OMG! Mom and Husband approved! Want the recipe? GO HERE!




 Thankful that our Publix has the Betty Crocker GF baking mixes, used the cookie mix. I even found the Gluten Free Glutino Pretzels! They were pretty good but for my taste they needed more salt. 




Chopped up the mini peanut butter cups. Melted the caramels in my  
Small Micro-Cooker, totally nonstick and I love it so much!









Added the extra dough to the top and popped it in the oven. 






 Left the top clear of chocolate so if someone wanted to add more to the top that was fine but I'm not a huge chocolate person. It was so good but definitely something to be eaten in moderation. Loved making it and will def be making it again soon!

Gluten Free Dinners (Gettin' Easier)

Been having fun trying to find Gluten Free (GF) foods and recipes. So far so good :) The headache is gone but I did have to take a sip of mylanta this morning...I need to incorporate more fiber I just haven't had a salad in a VERY long time that always really killed my stomach. So we shall see, I pushed it enough having rice tonight which is something else I haven't had in a VERY long time. it used to make my stomach cramp and make me so sick so I'm praying that I'll be ok tonight.

National Scrapbook Day

I couldn't NOT scrapbook today. My project may not have been a layout but it finished up my Mother's Day projects. My obsession with taking ordinary things and making them personal has carried over into the gift giving world. I've also come to the conclusion that I NEVER have to buy a greeting card or a gift for anyone ever again. After getting mycraft room organized tonight I ahve a HUGE box of "gifts". I seem to pick up things on sale and put them away to be given as gifts only to realize that I've got gifts for some people in my family for the next 5 years. Good thing bad thing? I don't care lol

Took a plain plastic flower pot
(which Mike is going to insert plants for me since I seem to kill all living greenery).




Added some alphabet chipboards, 
embellishment flowers and butterflies, 
ribbon on the bottom and middle 
all over tulle that I adhered first.



I just LOVE these decorative flowers and butterflies...
and the letters were purchased 
with Martha in mind they just scream garden :)
That's normally where you will find her.



Tomorrow is Mother's Day and even though 
I wont get a chance to sleep in or 
probably have 5 minutes to myself the entire day 
I will know that my little man appreciates me. 


& I will do all I can to show that 
I appreciate my Mother more than words
can even express and 
I do not know what I would do without her!

The Cook in Me

I LOVE cookbooks! Being a Pampered Chef consultant has given me free reign to read thru new cookbooks each season and this Spring we have 2 new books...



"Dinner in your Deep Covered Baker"

&

"Make it FRESH Make it HEALTHY"

Pampered Chef cookbooks are always affordable $7.50 and $14.75 respectively. I'm enjoying them both so much, my husband is drooling as I type.

The great thing about the "Dinner in your Deep Covered Baker" is that the DCB is not only a slow cooking oven stoneware piece but can also be used in the microwave and the cookbook gives you some awesome casserole and meat recipes that are both simple and impressive. I may be partial to Pampered Chef but the recipes can be used in any ovenware piece.

The "Make it FRESH Make it HEALTHY" cookbook has so many light and airy (yes food can be airy). I can pick out at least 4 recipes right off the bat that I have to try out...

1) Espresso Panna Cotta (Yes I'm starting with Dessert)
2) Loaded Baked Tomatoes
3) Skinny Turkey Tandoori
4) Zucchini Ribbon Primavera

In later posts I'll show the recipe off but for now you will just have to purchase the books yourself if you're interested...oh I know it's a tease but it's at least a healthy tease.
