Make It Monday {Link Up @The Memory Nest}

Here's my first contribution to a Make It Monday with The Memory Nest! I loved the challenge to choose a saying from the pic, choose a layout AND use an office supply. Here's my Layout, I chose "Dream Big" and I used staples as an accent on the layout.

Transformer Birthday Party {Party Time}

My son turned 4 this weekend and he requested a Transformer birthday party. With the revival of the series in recent years a lot of items weren't too hard to find online but the local stores lacked in the party planning department. So here's how things turned out:

{The invite! Made with Jinger Adams premade prefolded cards, gears washi tape, Transformer stickers, Alpha stickers and a Alpha Letters Stamps for the PARTY}


{The cake was made using a silicone cake pan I found on Amazon.com and it was decorated by my very talented SIL. Party hats ended up being from the Dollar Tree}

 {Also found some Transformer Ring Cupcake toppers on Amazon for the cupcakes & my SIL decorated the frosting with Platinum Edible Dust found on Amazon too!}


 {I made the cupcake holders using plain old white gift boxes, cut out an X where each cupcake would fit and then tape the boxes together. Then I edged the outside of the boxes with Super Hero Duct tape I found at Michael's and printed the Happy Birthday Russell on the printed and tapes it on with clear tape.}

{Goodie bags consisted of Dollar Tree Truck cellophane bags, some Dollar Tree Plane Kazoos, Dum Dum Lolli Pops, a Transformer Crayon (separated from a pack of 10) & a Transformer Coloring Activity Pad}

{Best part of the party for my son was having his friends with him at the beach, one of his favorite places to be...in the water. Such a Keys kid}

{Crafting} Mail Art

Finally sat my rear end down, pulled out some blank envelopes, a stack of stamps and ink and started creating. Ended up with MAIL ART that I am so happy to share with you!

When was the last time you mailed a LETTER? A text message or email do not stand a chance against a letter in the mail from a friend or family member. Why not start sending happy mail?

I will have these for sale at our craft booth here in the Keys next week with proceeds benefiting filling backpacks with supplies for the local schools, but I'm thinking about selling them online....what do you think?

{Gluten Free} Bisquick Garlic Cheddar Biscuits

Gluten Free Bisquick is just about the love of my life! Using the recipe directly from the box (Bisquick, Milk, Shortening and Eggs) I also added Garlic Powder, I'd prefer fresh but I'm all out, and about a cup of Sharp Cheddar Cheese. Baked them up on a metal baking pan, they come out nice and crispy on the bottom!



Using the large scoop I got 12 biscuits but they could have been made a little smaller to get a few more out of the dough.

You could add just about anything to them, ie Rosemary and Parmesan, Thyme and Asiago? They will go great with my lasagna leftovers :)

{Gluten Free} Lasagna Roll Ups *Tweeked*









What you will need:
Lasagna Noodles (Tinkyada Lasagna Brown Rice Noodles)
Tomatoes
Feta Cheese
Basil
1/2 Jar of Marinara

Cheese Mixture:
1 cup Ricotta Cheese
1 Egg
    BLEND the two together well, then add:
8 oz Italian Shredded Cheese
1/3 cup Parmesan Cheese

  • Preheat oven to 350 degrees
  • Cook lasagna noodles per the package (I used Gluten Free Tinyada Brown Rice Lasagna Noodles)
  • Lay each noddle out and add a layer of cheese mixture
  • a layer of sliced tomatoes (whatever you have, I used cherry tomatoes which gave it a great flavor)
  • sprinkle on some Feta cheese 
  • then some fresh basil (I used dried basil and tasted just fine)
  • ROLL EACH ONE UP
  • Add them to a baking dish with a little marinara in the bottom
  • Top with Marinara, Shredded Cheese and Sliced Tomatoes
  • Bake for approx 30 minutes covered with foil
  • Take off the foil and bake for approx another 10 minutes
