{Gluten Free} Lasagna Roll Ups *Tweeked*









What you will need:
Lasagna Noodles (Tinkyada Lasagna Brown Rice Noodles)
Tomatoes
Feta Cheese
Basil
1/2 Jar of Marinara



Cheese Mixture:
1 cup Ricotta Cheese
1 Egg
    BLEND the two together well, then add:
8 oz Italian Shredded Cheese
1/3 cup Parmesan Cheese

  • Preheat oven to 350 degrees
  • Cook lasagna noodles per the package (I used Gluten Free Tinyada Brown Rice Lasagna Noodles)
  • Lay each noddle out and add a layer of cheese mixture
  • a layer of sliced tomatoes (whatever you have, I used cherry tomatoes which gave it a great flavor)
  • sprinkle on some Feta cheese 
  • then some fresh basil (I used dried basil and tasted just fine)
  • ROLL EACH ONE UP
  • Add them to a baking dish with a little marinara in the bottom
  • Top with Marinara, Shredded Cheese and Sliced Tomatoes
  • Bake for approx 30 minutes covered with foil
  • Take off the foil and bake for approx another 10 minutes
